Just a southern gal from Georgia who has a real problem with baking. And by problem I mean, I can't help myself! :D I am married to the love of my life, he puts up with me so well! I am mother to the most adorable, yet tough little boy. And mother to a most beautiful full of attitude, little girl. I can't forget about our 4-legged family members! Our terrier Lucy, Our Great Dane Milo, our mutty mutt Ellie and our cats Abbey and Sammy! I LOVE to bake and I am trying to start up my own cupcakery. I love vintage anything! My blog started out as a blog for my cupcakes, now it has turned into an everyday into the life of "ME" blog. Life is not perfect and wonderful all the time, you will hear me gripe, bahahaha, it isn't all cupcakes. Just a heads up per say. :D Hope your reading experience is enjoyable! Brookies-- Just saying

Tonight I threw together an easy-as-can-be supper of spaghetti bake and garlic bread. Why? You ask. Simple, I was saving my strength for the brookies I was about to conquer. And conquer, I did! They were so easy to make, my arm seemed a little less enthused than my heart, but fun none the less. I got the recipe from Bakerella, and thank you sooo much! These are very rich and tempting chocolatey ooey bars of goodness. I am warning you, these are addicting. Pair with an ice cold glass of milk and I am ready to crawl into bed sucking my thumb! Ok, maybe not SOOOO amazing, but close. I have put the recipe below along with a couple of pictures! Enjoy. And if you make them, send me some pix!

Brookies

2 3/4 cup all purpose flour

2 1/2 teaspoons baking powder

1/2 teaspoon salt

2/3 cup butter, softened

1 lb. light brown sugar

3 eggs

1 teaspoon vanilla

11.5 ounce package milk chocolate chips

1 cup chopped pecans (optional)

By hand:

Sift flour, baking powder and salt into a large bowl. Set aside.

Stir brown sugar into softened (not melted) butter in another large bowl until butter disappears. You can use the back of your spoon to help incorporate the two together.

Add eggs one at a time to butter mixture and stir well after each egg.

Add vanilla, chocolate chips and nuts. Mix well.

Add dry flour mixture and stir until well combined.

Coat a 13 X 9 pan with non-stick spray and spread batter evenly into dish.

Bake at 350 degrees for 30-45 minutes or until top is golden brown. Make sure you don’t over bake.

Enjoy! Enjoy! Enjoy!
